In March, Green & Fortune proudly became a Certified B Corporation, joining a global community of businesses committed to using business as a force for good. Achieving B Corp recognises our long-standing commitment to responsible business practices, from ethical sourcing to supporting our people and communities.
To celebrate this milestone, we partnered with Kings Place Events, our exclusively managed events venue in the heart of King’s Cross, to host Shades of the Summer; an intimate dinner for industry clients, agents and fellow B Corps. More than a celebration, the evening was an opportunity to demonstrate how exceptional hospitality and sustainability can work seamlessly together, inspiring guests with what’s possible when sustainability is considered at every stage of an event.
Every detail of Shades of the Summer was carefully designed to showcase our approach to sustainable catering.
The dining table celebrated the very ingredients featured throughout the menu, with a centrepiece made up of seasonal British fruit and vegetables supplied by Valimex. More than a visual statement, it sparked conversations about provenance, seasonality and responsible sourcing. The tablescape was complemented by elegant tableware from our partner Options Greathire.
Rather than presenting guests with a traditional menu, we invited them to discover the story behind every dish. Each course included details about the ingredients, suppliers and sustainable techniques behind its creation, helping guests understand not just what they were eating, but why those choices matter. The menus themselves were printed on seeded paper, allowing guests to plant them at home and giving the evening a lasting legacy.
The menu was designed to celebrate seasonal British produce while demonstrating how thoughtful cooking techniques can minimise waste and maximise flavour. Each dish was introduced by our Chef Director, Dan and complimented sustainable drink pairings introduced by our Head of Beverage, Joe.
Our starter showcased field-to-fork cooking through a celebration of the humble British carrot. Miso-braised heritage carrots were served alongside carrot top chimichurri, rescued carrot skin crisp, puffed British quinoa, Graceburn soft cheese and candied seeds. Every part of the vegetable was used with purpose, from the vibrant green tops to the skins, which are often discarded. The result was a dish that celebrated creativity and whole-crop cooking.


For the main course, we showcased lamb from Corneyside Farm, our own farm in Northumberland, giving guests complete transparency from farm to fork. The dish featured rump of lamb, sticky lamb belly, Kentish broad beans, runner beans, Jersey Royal cake and grilled apricot.
Having our own farm allows us to ensure exceptional provenance, high standards of animal welfare and complete traceability. The inclusion of slow-braised lamb belly reflected our nose-to-tail philosophy, demonstrating how often overlooked cuts can deliver incredible flavour while reducing waste. Stocks and sauces were prepared in-house using the whole carcass, ensuring every part of the animal was valued.
Dessert offered guests an interactive Eton Mess station featuring vegan meringues made using aquafaba – the cooking liquid from chickpeas that would otherwise be discarded. As chickpeas are used regularly across our kitchens, transforming aquafaba into delicate meringues is one of the many ways we give ingredients a second life. The evening concluded with a B Corp digestif and a Black Lines cocktail trolley, providing a memorable finish to the celebration.
Throughout every course, sustainability wasn’t treated as an add-on; it was woven into every ingredient, every technique and every decision.
